The 2016 ‘Waxing Lyrical’ Mataro is a single Vineyard Wine made from two patches of vines grown on our ‘Stonewell Hill’ Vineyard. The 'Salt and Pepper' of the blend is 1923 Planted Survivor Vine Mataro, overlaid on 'Clare Clone' young vine Mataro. So often Mataro is relegated to a supporting role behind its more well known 'Rhone' siblings but for the Waxing Lyrical it is all about Mataro as a variety standing proud, ‘Front and Center’.

Round summer red and black fruit interweave with spicy varietals and great acid balance. Light grippy tannins balance the fruit while firm acid cleanses the mouth for the next sip. Its a Complex and Lithe wine that displays the wonderful potential in this variety and aromatic lightness sometimes missing in wines from the Barossa.

The 'Salt and Pepper' of the blend is 1923 Planted Survivor Vine Mataro, overlaid on 'Clare Clone' young vine Mataro. So often Mataro is relegated to a supporting role behind its more well known Rhone siblings (Shiraz and Grenache) but for the waxing lyrical i wanted it ‘front and center.
In 2016 I picked both blocks of Mataro on the same day, and co-fermented the old with the young. Co-fermentation essentially let these separate plantings learn to sing together in the david Franz symphony of wine. The Mataro was all hand picked and field de-stemmed in the vineyard using my customized field de-stemmer.
Once back at the winery and laid out on the ‘slab’, the must in all ferments were carefully hand plunged three times a day throughout primary fermentation (which took 14 days). The skins were then sealed down with heavy duty ‘cling film’ and the fermenters covered to keep any unwanted visitors away for a total of 36 days on skins. After basket pressing each parcel was filled with full solids to seasoned oak hogsheads for 18 months aging. This wine was made with the philosophy of minimal intervention as the guiding principal, and apart from minimal sulfur dioxide for preservation and a little tartaric acid for balance is free from additions or fining and has been ‘bottled’ without filtration. The 2016 ‘waxing lyrical Mataro is a remarkably delicious example (if i don’t say so myself) of the lifted lyrical nature of this delicious variety.
