When it comes to varietals and wine, deep down inside I reckon each one of us has a favorite; Barossa Cabernet Sauvignon is undoubtedly mine. It is as unique and distinctive as the more famous Shiraz, But for me, there is so much more going on. The flavour spectrum encompasses an absolute treasure box of liquorice, red and black summer berries, anise fennel spice box and chocolate. In my (biased) opinion, few things can match the poise of full flight Barossa Cabernet...

Colour:

Rich and deep red with a brooding dark core

Nose:

Great Barossa Cabernet varietals - Piercing red berry and black currant over dark chocolate, liquorice savory leather and cedar notes. Plenty of fragrant dark fruits.

Palate:

Vibrant cassis and savory strap liquorice. Rich mid palate with gentle warmth and fine elegant tannins. Great length with a slathering of rich lingering chocolate flavours coating the mouth

Philosophy:

It’s the start of April in 2017 and we’re in the thick of vintage as I sit and write this label. My Georgie Girl is now only a few short months off of turning nineteen. Holy Shit! How did those years go past so quickly?? Nicki and I are so proud of our girl. She knuckled down last year and absolutely smashed her final year of High School. Her ATAR score was brilliant (lets just say 35% better than mine) and her first preference for Uni was a Monty. She’s chosen, accepted and deferred Marine Biology at Flinder’s Uni. Bit left of centre some might think, but obviously the movie ‘Andre’ watched religiously as a 3-5 year old had it‘s impact. So now ‘G’ is having a well deserved gap year, working and (given she shares my genes) partying on the odd occasion. In a few weeks (all things being equal) we will (FINALLY) have the david Franz Cellar Door open and I‘m hoping I’ll be able to entice her to bring her brilliant touch on board as a part of the team. The coming year will no doubt be chock full of fantastic stuff for my beautiful girl which I for one will enjoy watching unfold!

2012 was a pretty special vintage. After the crazy wet of the previous year the vines kicked off spring with fresh solid and an arm full of health. The growing and ripening season was pretty ideal, although a few late spring and summer rains caused the nerves to jangle a bit! For me, the Cabernet gained flavour ripeness at lower Baume than we’ve seen for awhile so (in line with my evolving taste buds) got it in and started smashing it about...I hand made 17 small open ferments ranging in size from 550Kg to 750Kg. Each batch was hand plunged three times a day during ferment before being basket pressed after a total of 35-40 days on skins. The wine was filled with full lees to a mix of new and seasoned American oak with a sprinkle of seasoned French oak for 30 months maturation.
In 2022, 192 bottles have been re-released of the the Cellar Release 2012 Georgie’s Walk Cabernet Sauvignon. Team david Franz have as always finished the bottle with the hand printed love we would never let it leave home without.
