Production:

Grown in the Eden Valley on High Altitude Light Loamy soils, layered over Granite.

Colour:

Bright straw with Lemon Rind Intensity.

Nose:

Intense limes and lemons underlaid with a rich bready yeasty complexity

Palate:

Bold rich structure of ripe lemon/lime curd with a dollop of sorbet. Firm and balanced acidity with a pleasing phenolic line over a full and delicious mid palate. Long on flavour rich and supple in the mouth. An excellent candidate for aging but brilliant in the first flush of youth.
Guaranteed to be a complex and rewarding drink!

Philosophy:

When I ticked over the ripe old age of... let say 18 for the sake of liquor licensing purposes, a hot summer day was slaked by mixing a bottle of Hock with a liter of lemonade in the 2L willow water bottle, heaps of ice and balancing the whole brew out with judicious splashes of Brown Lime Cordial. This Pub Classic - the Hock Lime and Lemonade was just the perfect spritzer to slake the thirst, and 'interesting-up' even the dullest mid summer day. Luckily, it works just as well in the depths of winter!
